Like true traditional balsamic vinegar has only one ingredient cooked to perfection, i.e. cooked grape must, or mosto d’uva cotto. The final product is aged for 8 to12 years in wooden caskets.
The D.O.P. initials are awarded only after the vinegars have been certified by the Consorzio Produttori Aceto Balsamic Tradizionale di Modena, an official Italian consortium that handles all bottling of balsamic vinegars to ensure quality and reliability. D.O.P. stands for a protected area of origin and is the sign of true traditional Balsamic Vinegar. Another one of our products is the Aceto Balsamico di Modena I.G.P. It is made in the same way as the traditional D.O.P version. However a bit of wine vinegar is also added to the grape must while it is being cooked. Caramel may also be added to adjust the coloring of the product.
