Denissimo Balsamic Vinegar

Redstone Olive Oil's Denissimo Aged Balsamic Vinegar starts with ripe Trebbiano grapes which are crushed whole & boiled to create a caramelized grape must which is then blended with 1% aged Italian Red Wine Vinegar (adding a pro-biotic effect) before further aging and reducing in large to small wooden casks to concentrate the vinegar. Typically this aging takes place in attics where heat and time bring out extraordinary flavors as the vinegar reduces.  The aging process uses the time honored "Batteria" of Modena Italian style, in which this delicious vinegar ages in five different casks made from cherry wood, ash, oak, mulberry & juniper, resulting in complex flavors that work exceptionally well in any culinary application.  

Connoisseurs will rave about the complex flavor notes of dried fruit, cherry wood, dark chocolate, figs, raisins, and malt.
