The process begins with grape must — freshly crushed grape juice — cooked slowly in open copper kettles until it reduces and thickens into a rich, concentrated base. From there, it enters the Solera System: a series of progressively smaller barrels made from chestnut, oak, mulberry, and ash. Each year, a portion of the vinegar moves to the next barrel, absorbing new character from each wood. Over 18 years, it becomes something no shortcut process can replicate.

The result is a condiment that carries the legacy of Italian artisanship in every drop.
