We Start at Harvest Ultra Premium olive oil is not made in a bottling facility. It is made in a grove, at the right moment in the harvest season, with olives picked before they are fully ripe. Early-harvest olives yield lower quantities of oil — but that oil is dramatically higher in polyphenols, the bioactive compounds responsible for both health benefits and the complex, peppery flavor that distinguishes truly great EVOO from ordinary grocery store oil. Every producer we work with harvests early, presses within hours of picking, and uses cold extraction to preserve every milligram of polyphenol content. This is not industry standard. Most commercial olive oil is made from overripe fruit, often weeks after harvest. We insist on better. Early Harvest Olives picked at 10–30% ripeness, when polyphenol concentration is at its peak. Lower yield, dramatically higher quality. Same-Day Pressing Olives are milled within hours of harvest. Delays cause oxidation and acidity. Our producers press the same day — always. Cold Extraction Oil extracted below 27°C to preserve volatile aromatics and protect polyphenol integrity throughout the process. Lab Tested Every lot is independently tested by an accredited laboratory. We publish the results. No batch ships without passing the Ultra Premium standard. 733.3 ppm Polyphenols Our flagship Tunisian Chetoui EVOO tests at 733.3 ppm total biophenols — more than 7× the minimum required for Ultra Premium certification. The industry average for supermarket olive oil is below 100 ppm. Where Our Oil Comes From 🇹🇳 Tunisia — Chetoui Varietal Our highest-polyphenol oil. The Chetoui olive is native to northern Tunisia and produces an intensely robust, complex EVOO with grassy, artichoke, and black pepper notes. Our Tunisian partner harvests in October at peak phenolic concentration, pressing within the same day on modern continuous-cycle equipment. 🇪🇸 Spain — Manzanillo Varietal Spain's most widely planted olive produces an approachable, balanced EVOO with fresh-cut grass and mild pepper finish. Our Spanish Manzanillo tests at 664 ppm biophenols — well above Ultra Premium thresholds — and is one of our most versatile everyday oils. 🇮🇹 Italy — Coratina Varietal The Coratina is prized for its bold, peppery intensity and among the highest natural polyphenol levels of any Italian cultivar. Our Italian Coratina is sourced from Puglia, the heart of Italian olive oil production, where centuries of tradition meet modern milling precision. 🇺🇸 California — Arbosana Varietal For customers who prefer a domestic source, our California Arbosana delivers the clean, buttery-to-fruity profile characteristic of this Spanish cultivar grown in California's Central Valley. Harvested and milled under California Olive Oil Council standards, and independently tested to confirm Ultra Premium quality. The Ultra Premium Standard Ultra Premium is the highest grade designation in the olive oil industry — stricter than "Extra Virgin" by every measure. It requires early harvest, same-day milling, cold extraction, a free acidity below 0.3% (Extra Virgin allows up to 0.8%), and independent laboratory verification of chemistry and sensory quality.
