These Bacon Wrapped Scallops with Spicy Chipotle Olive Oil Mayonnaise is a really great appetizer recipe that’s special enough for a holiday or fun celebration party.
Get the best scallops you can. Fresh is great, but only buy fresh if you’re going to use them the same day you buy them. A good market will probably have frozen/thawed scallops. Let them thaw overnight in your refrigerator before making this recipe.
- 1 1/2 lb large scallops
- 1/2 lb thin-sliced bacon
- Redstone Butter Olive Oil
- Redstone Pink Himalayan Sea Salt
- Redstone Tuscan Sun Spice Blend
- 1 cup mayonnaise
- 2 tsp Redstone Chipotle Olive Oil
Heat the broiler. Wrap each scallop in a piece of bacon and secure with a toothpick. Place the bacon wrapped scallop onto a baking sheet, drizzle them with our butter olive oil and sprinkle with Tuscan Sun spice blend and Pink Himalayan Sea Salt. Cook them under the broiler for about 10 - 15 minutes until the bacon is cooked through, turning once.
Combine mayo with Chipotle Olive Oil and dash of black pepper. Serve warm.
