Herb Roasted Butternut Squash

Ingredients:

  • 1 butternut squash - peeled, seeded, and cut into 1-inch cubes
  • 4 tbsp Redstone Wild Mushroom & Sage Olive Oil
  • 2 cloves garlic, minced
    salt and ground black pepper
  • 2 tsp Redstone Balsamic (Choose Maple, Cinnamon Pear, Blackberry Ginger or Honey Ginger)
  • parsley flakes (garnish)

Instructions:

  1. Preheat oven to 400 degree
  2. Toss squash with olive oil and garlic.
  3. Season with salt and black pepper.
  4. Arrange on a baking sheet.
  5. Roast until squash is tender and lightly browned, 25 to 30 minutes.
  6. Drizzle with balsamic
