This dressing is simple enough for any salad. Try marinating chicken, pork, and YES even shrimp... before grilling. Delicious!
Mango Citrus Salad
Ingredients: 4 servings
• 4 cups baby spinach or watercress leaves
• 1/2 lb cooked ham, chopped
• 1/2 cups fresh mozzarella, diced
• 1/4 cups fresh pineapple, diced
• Optional (avocado, walnuts, apple, or sliced pears)
Dressing Ingredients:
• 1 cup puree from fresh pineapple
• 3 tablespoons Redstone Mango Balsamic
• 2 tablespoons honey
• 1/4 cub Redstone Lemon Olive Oil
• salt and pepper to taste
Instructions:
1. Place chunks of pineapple in bottom of blender.
2. Puree until completely smooth.
3. Add balsamic, honey, and olive oil.
4. Blend until smooth. Salt and pepper to taste.
5. Pulse to combine.
6. Pour into glass jar and refrigerate.
7. Shake well before serving.
8. Layer the salad ingredients (spinach or watercress, ham, mozzarella, pineapple, avocado, walnuts, apple or pears) onto a plate.
9. Drizzle with the prepared dressing.
