Salad for breakfast? Heck yes! This Kick Start Breakfast Grapefruit Salad is chock full of good fats, tasty protein, and tons of fiber.
Kick Start Breakfast Grapefruit Salad
Ingredients- 1 oranges
- 1 pink grapefruit (or red)
- 1 potatoes (roasted)
- 1 cup baby spinach or mixed greens
- 6 cherry tomatoes (multicoloured, halved)
- 6 slices smoked salmon
- 1 avocado (sliced)
- 1/8 cup toasted sliced almonds
- 1/4 cup feta (sliced)
- 1/4 cup orange juice
- 1 Tbsp Redstone Milanese Gremolata Olive Oil
- 1 Tbsp Redstone Grapefruit White Balsamic Vinegar
- 1/2 tsp Dijon mustard
- 1/2 tsp honey
- 1/4 tsp poppy seeds
- salt and pepper to taste
Directions
- Slice peel from top and bottom of oranges and grapefruit. Cut off and discard remaining peel, including white pith, so flesh is showing. Cut citrus into thin rounds. Slice potatoes. Layer citrus slices and potatoes with greens and tomatoes. Top with salmon, avocado, almonds and feta.
- Whisk orange juice with olive oil, vinegar, Dijon, honey, poppy seeds and salt in a small bowl. Season with fresh pepper. Drizzle over salad.
