Made using the Italian pressato method, fresh rosemary and ripened olives are pressed together in the same barrel — extracting the essential oils from both simultaneously for a depth of flavor that infused oils simply can't replicate. The result is a bright, piney, intensely herbal oil that is as at home on a dinner table as it is in a professional kitchen.

The story behind the fusion

Most flavored olive oils are made in two steps — the oil is pressed first, then flavor is added after. Rosemary Fused Olive Oil is different. We use the Italian pressato method, also called Agrumato, where fresh rosemary and ripened olives are pressed together in the same barrel at the same time. The result is a single, unified extraction — the olive oil and the rosemary's essential oils become one from the very first press.

This method is more labor-intensive and requires perfect timing — the rosemary must be at peak freshness when the olives are crushed — but the payoff is a flavor that is deeper, more authentic, and more stable than anything a two-step infusion process can produce. You can taste the difference immediately.

Rosemary has been a cornerstone of Mediterranean cooking for thousands of years, prized as much for its medicinal properties as for its culinary ones. In this oil, it's not a flavoring — it's a co-equal ingredient pressed in from the start.

Caring for your bottle

  • Store in a cool, dark place — a pantry or cabinet away from the stove is ideal
