Bacon Pepper Kale Frittata
You may be under the impression that a frittata is a “breakfast only” item. It's an anytime meal!
Bacon Pepper Kale Frittata
Ingredients: 4 servings
- 1 cup chopped kale, stems removed
- 8 strips bacon or ham, cut into small pieces (optional)
- 1 teaspoon Redstone Original spice blend
- 1 tablespoon mayonnaise
- 1/4 cup heavy whipping cream
- 2 tablespoons Redstone Chipotle Olive Oil or Redstone Baklouti Olive Oil (spicy)
- 7 large eggs
- 1/2 cup shredded Parmesan cheese
- 6 cherry tomatoes

Instructions:
- Heat oven to 400 degrees.
- In a large bowl beat eggs, mayonnaise, whipping cream, spice blend, and Parmesan cheese, whisk to combine.
- Heat a non-stick skillet over medium low heat and fry bacon until crisp or warm ham. Place meat on paper towel to cool.
- Using the same skillet lightly fry kale until leaves soften. Add meat, olive oil, and egg mixture. Stir gently.
- Before the eggs begin to set, arrange tomatoes on top. Cook for 3 minutes.
- Once the frittata begins to set, place the skillet in oven for 5-10 minutes, or until completely cooked.
