Bacon Pepper Kale Frittata

Ingredients: 4 servings

  • 1 cup chopped kale, stems removed
  • 8 strips bacon or ham, cut into small pieces (optional)
  • 1 teaspoon Redstone Tuscan Sun Spice Blend
  • 1 tablespoon mayonnaise
  • 1/4 cup heavy whipping cream
  • 2 tablespoons Redstone Chipotle Olive Oil (smoky) or Redstone Baklouti Olive Oil (spicy)
  • 7 large eggs
  • 1/2 cup shredded Parmesan cheese
  • 6 cherry tomatoes
  • cooking spray

Instructions:

  1. Heat oven to 400 degrees.
  2. Mix eggs, mayonnaise, whipping cream, spice blend, and Parmesan cheese in a large bowl, and whisk to combine.
  3. Heat a non-stick skillet over medium-low heat and fry bacon until crisp or warm ham. Place meat on a paper towel to cool.
  4. Using the same skillet, lightly fry kale until leaves soften. Add meat, olive oil, and egg mixture. Stir gently.
  5. Before the eggs begin to set, arrange tomatoes on top. Cook for 3 minutes.
  6. Once the frittata begins to set, place the skillet in the oven for 5-10 minutes or until completely cooked.
