3 romaine hearts, leaves separated

¼ cup Redstone Meyer Lemon Olive Oil

⅓ cup Redstone Coconut Balsamic Vinegar

Redstone Lime Fresco Sea Salt, to taste
Homemade Croutons

3 cups country bread, torn into 1-inch pieces (crusts on)

3 tablespoons Redstone Tuscan Herb Olive Oil

Salt and pepper, to taste
Instructions:
- Preheat oven to 375°F. Toss bread with the Tuscan Herb olive oil on a baking sheet and season with salt and pepper. Bake for 10–15 minutes, tossing occasionally, until golden and crisp. Let cool before adding to the salad.
- Whisk all ingredients fort he dressing together until smooth and emulsified. Adjust seasoning to taste. Refrigerate before serving. Store any extra dressing in the refrigerator for up to 4 days.
- Arrange romaine leaves on a large platter or bowl. Top with Parmesan, croutons, and anchovies if using. Drizzle generously with dressing just before serving.
