Balsamic Roasted Onion Guacamole


  • 1 large purple onion, chopped
  • 2 cloves garlic, chopped
  • 2 Tbsp. Redstone Sicilian Lemon Balsamic Vinegar
  • 1 Tbsp. Redstone Tuscan Herb Olive Oil
  • 4 ripe, avocados
  • 1 Tbsp. lemon juice
  • 1/2 tsp. Redstone Infused Sea Salt (If you like spicy - choose Redstone Venom Sea Salt; If you like citrus - choose Redstone Lime Fresco Sea Salt; If you like garlic - choose Redstone Black Garlic Sea Salt)
  • 1/2 tsp. Redstone Citrus Orchard Spice Blend


  1. Toss together the first 4 ingredients
  2. Place in an aluminum foil-lined baking pan.
  3. Bake in a 425-degree F oven for 25 to 30 minutes or until lightly browned, stirring once.
  4. Cool.
  5. Seed, peel and mash avocados in a medium bowl.
  6. Stir in onion mixture, lemon juice, sea salt, and spice blend.
  7. Chill 1 hour.
