Best Balsamic Roasted Onion Guacamole
Ingredients:
- 1 large purple onion, chopped
- 2 cloves garlic, chopped
- 2 Tbsp. Redstone Sicilian Lemon Balsamic Vinegar
- 1 Tbsp. Redstone Tuscan Herb Olive Oil
- 4 ripe, avocados
- 1 Tbsp. lemon juice
- 1/2 tsp. Redstone Infused Sea Salt (If you like spicy - choose Redstone Venom Sea Salt; If you like citrus - choose Redstone Lime Fresco Sea Salt; If you like garlic - choose Redstone Black Garlic Sea Salt)
- 1/2 tsp. Redstone Citrus Orchard Spice Blend
Instructions:
- Toss together the first 4 ingredients
- Place in an aluminum foil-lined baking pan.
- Bake in a 425-degree F oven for 25 to 30 minutes or until lightly browned, stirring once.
- Cool.
- Seed, peel and mash avocados in a medium bowl.
- Stir in onion mixture, lemon juice, sea salt, and spice blend.
- Chill 1 hour.
