Instructions

  1. Pat the pork chops dry and season generously with salt and pepper.
  2. Heat the olive oil in a heavy skillet over medium-high heat. Sear the chops 4-5 minutes per side, until golden and cooked to 145°F internally. Remove and let rest.
  3. Reduce heat to medium, add the Blackberry Ginger Balsamic Vinegar to the same skillet, and simmer 3-4 minutes, scraping up any browned bits, until it thickens into a glaze.
  4. Stir in the butter off heat until glossy.
  5. Spoon the glaze over the rested pork chops and serve.
