Lemon Dill Green Beans make a perfect side dish to any entree. This dill vinaigrette is a natural complement to green beans. It's also great tossed with steamed asparagus or drizzled over sliced fresh tomatoes.
2.5 lbs Green Beans trimmed and washed
2 Shallots minced
2 tsp Dijon Mustard
2 tbs Redstone Wild Fernleaf Dill Olive Oil
3 tbs Redstone Meyer Lemon Olive Oil
Trim, wash, and steam green beans until tender. Whisk the minced shallot, dijon mustard, and olive oils in bowl. Drizzle olive oil mixture over green beans. Heat and serve.
