This easy hearty chili recipe is easy to make, thick, chunky, and packed with flavor! It's a hearty tomato-based chili filled with beans, vegetables, and beef (optional), perfectly seasoned for delicious taste. This chili is definitely one of my family's favorite meals, and I love it because of how simple it is to prepare!
Easy Hearty Chile
Ingredients:
- 2 16 oz cans of Pinto Beans
- 1 16 oz can of Kidney Beans
- 1 16 oz can of Black Beans
- 2 16 oz cans stewed diced stewed tomatoes
- 1 8 oz can of tomato sauce
- 1 7 oz can of diced green chiles
- 1 large carrot, peeled and diced
- 1 large onion, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 3 tablespoons Redstone Chimichurri Olive Oil (mild spicy) or Baklouti Olive Oil (spicy) or Garlic Olive Oil (no spice)
- 1/4 cup Redstone Black Cherry (hint of sweet) or Traditional (savory) Balsamic Vinegar
- 2 tablespoons Chile powder
- 2 teaspoons ground Cumin
- 2 teaspoons minced fresh garlic
- salt and pepper to taste
- 1 lb ground beef (optional)
Instructions:
- Brown ground beef in large stock pot (optional).
- Saute / Add to browned beef diced onions, carrots, red and green peppers in a large stock pot until onions are clear and veggies are el dente.
- Add diced green chiles, garlic, chile powder, and cumin. Saute one minute.
- Add all beans, balsamic vinegar, tomato sauce, and stewed tomatoes.
- Simmer on low until bubbly hot.
- Salt and pepper to taste.
- Serve garnished with sour cream, grated cheese, corn chips, and jalapeno peppers (optional).
- Refrigerate leftovers for the next day.
