Watermelon Basil Caprese
A fresh, modern twist on a classic Caprese. Sweet watermelon, creamy mozzarella, and fragrant basil finished with a delicate drizzle of basil olive oil and watermelon balsamic.
Ingredients (Serves 4)

4 thick triangular slices of ripe watermelon

8 oz fresh mozzarella, sliced into rounds

Fresh basil leaves

2 tbsp basil-infused olive oil
-
1–2 tbsp watermelon balsamic

Flaky sea salt, to taste

Fresh cracked black pepper, to taste
Instructions

1. Prep Ingredients
Slice the watermelon into thick triangles, removing the rind. Pat dry with a paper towel to remove excess moisture, and set aside. Slice your Mozeralle in to quater inch thick slices, and set aside. Wash and dry your basil, and pinch off individual leaves of basil, making sure to keep them whole.
2. Assemble the Layers
On a serving plate or board, layer the fresh-cut watermelon, followed by slices of mozzarella, and top each stack with a fresh basil leaf. Repeat until all pieces are assembled.
3. Finish with Dressing & Seasoning
Lightly drizzle Redstone Basil-Infused Olive Oil and Redstone Watermelon Balsamic over the assembled Caprese.
4. Season & Serve
Sprinkle with flaky sea salt and freshly cracked black pepper. Garnish with additional basil leaves and serve immediately.
