That's the idea behind these Espresso Balsamic strawberries: macerated berries and their juices spooned over ice cream, then finished with a warm, syrupy drizzle of our Espresso Balsamic Vinegar. The dark roast notes in the vinegar deepen the strawberries' sweetness instead of competing with it, and the reduction adds a glossy, restaurant-style finish that takes almost no effort.

Our Espresso Balsamic Vinegar is barrel-aged and naturally rich with dark roast and molasses notes, so it reduces into a thick, coffee-toned syrup without any added sugar. It's the same reason it shines drizzled over vanilla ice cream, brownies, or a cheese board — the acidity balances sweetness while the espresso character adds depth.

Ingredients

  • 1 lb fresh strawberries, hulled and halved
  • 2 tbsp granulated sugar
  • 3 tbsp Redstone Espresso Balsamic Vinegar
  • 2 cups vanilla ice cream (or mascarpone)
  • 1/4 cup fresh basil or mint, thinly sliced

Instructions

  1. Macerate the strawberries. Toss the strawberries with sugar in a bowl and let sit at room temperature for 20 minutes to draw out their juices.
  2. Reduce the balsamic. In a small saucepan, simmer the Espresso Balsamic Vinegar over medium-low heat for 4–5 minutes, until it coats the back of a spoon. It will thicken further as it cools.
  3. Assemble. Spoon the strawberries and their juices over ice cream, then drizzle generously with the warm reduction.
  4. Garnish and serve. Top with sliced basil or mint and serve right away.

Notes & Variations

The reduction keeps in the fridge for up to two weeks — make a batch and keep it on hand for grilled peaches, chocolate desserts, or a cheese board. For a dairy-free version, swap in your favorite non-dairy ice cream.
