This wonderful, healthy, citrus, no cook salad is a favorite all summer long.
Lemongrass Herb Shrimp Avocado Salad
Ingredients:
- 1/4 C chopped red onion
- 2 T Redstone Lemongrass Mint Balsamic Vinegar
- 1 T Redstone Herbes de Provence
- 1/4 t Redstone Citrus Orchard Spice Blend
- 1 lb jumbo cooked peeled shrimp
- 2 medium avocado, sliced
- 1 jalapeno, seeded, diced fine (optional)
- 1 T chopped cilantro
- 1/2 cup spinach leaves
Instructions:
- In a small bowl combine red onion, balsamic, olive oil, and spice blend. Let them sit 5 minutes to mellow the flavor of the onion.
- Add shrimp, gently toss, let marinade 5 minutes.
- In a large bowl combine avocado, jalapeno, and cilantro.
- Add marinade mixture, spinach leaves, gently toss. Serves 4
