This wonderful, healthy, citrus, no cook salad is a favorite all summer long. 

Lemongrass Herb Shrimp Avocado Salad



  1. In a small bowl combine red onion, balsamic, olive oil, and spice blend. Let them sit 5 minutes to mellow the flavor of the onion.
  2. Add shrimp, gently toss, let marinade 5 minutes.
  3. In a large bowl combine avocado, jalapeno, and cilantro.
  4. Add marinade mixture, spinach leaves, gently toss.  Serves 4
