Mediterranean Chicken Bowl
A fresh, Mediterranean-inspired bowl featuring citrus-herb grilled chicken, whole grains, crisp vegetables, creamy hummus, and a bright finish of Redstone Extra Virgin Olive Oil and Redstone Citrus Orchard Seasoning.

Ingredients
Chicken

1½ lbs boneless, skinless chicken breast

3 tbsp Any Redstone Extra Virgin Olive Oil

½ tsp black pepper
Bowl Components

1½ cups cooked quinoa or bulgur wheat

1½ cups cherry tomatoes, halved

1½ cups cucumber, chopped

½ cup thinly sliced red onion
-
½ cup Kalamata olives
-
½ cup crumbled feta cheese
-
¾ cup hummus
-
Fresh parsley, chopped

Lemon wedges

Extra Redstone Extra Virgin Olive Oil for drizzling
Instructions

Toss chicken with Redstone Extra Virgin Olive Oil, Redstone Citrus Orchard Seasoning, and black pepper until evenly coated.

Heat a grill pan or skillet over medium heat. Cook chicken for 5–6 minutes per side, until golden and cooked through. Remove from heat and slice.

Cook quinoa or bulgur according to package instructions and prep vegetables while the chicken rests.

Assemble bowls with a base of grains, then add chicken, tomatoes, cucumber, red onion, olives, feta, and hummus.
