Best Peach Balsamic Bruschetta
Ingredients:
- 3 Fresh Peaches seed removed
- 1 tablespoon Honey
- Fresh cherry tomatoes, slice in half
- 3 tablespoon Redstone Peach White Balsamic Vinegar Or Balsamic vinegar of Choice
- ¼ cup Fresh Basil Cut into thin strips
- Salt
- Pepper
- 1 Baguette
- ¼ cup Redstone Tuscan Herb Olive Oil or for a spicy kick use Baklouti Green Chile Olive Oil
- 8 oz Goat Cheese, Ricotta, Cream Cheese, or Mascarpone
Instructions:
- Chop peaches into small pieces.
- In a large bowl, combine peaches, honey, tomatoes, and balsamic vinegar, toss to coat.
- Cut baguette at an angle into 1/2" thick slices
- Brush both sides of the bread slice with olive oil, arrange on a broiling pan.
- Broil bread slices for 3 minutes, flip them over, and broil another 2 minutes until bread is lightly toasted.
- Remove from oven, spread each slice with cheese and top with peach mixture. Garnish with basil. Serve immediately.
