Best Peach Balsamic Bruschetta

Ingredients:

  • 3 Fresh Peaches seed removed
  • 1 tablespoon Honey
  • Fresh cherry tomatoes, slice in half
  • 3 tablespoon Redstone Peach White Balsamic Vinegar Or Balsamic vinegar of Choice
  • ¼ cup Fresh Basil Cut into thin strips
  • Salt
  • Pepper
  • 1 Baguette
  • ¼ cup Redstone Tuscan Herb Olive Oil or for a spicy kick use Baklouti Green Chile Olive Oil
  • 8 oz Goat Cheese, Ricotta, Cream Cheese, or Mascarpone

Instructions:

  1. Chop peaches into small pieces.
  2. In a large bowl, combine peaches, honey, tomatoes, and balsamic vinegar, toss to coat.
  3. Cut baguette at an angle into 1/2" thick slices
  4. Brush both sides of the bread slice with olive oil, arrange on a broiling pan.
  5. Broil bread slices for 3 minutes, flip them over, and broil another 2 minutes until bread is lightly toasted. 
  6. Remove from oven, spread each slice with cheese and top with peach mixture. Garnish with basil.  Serve immediately.
