Citrus Orzo Salad

Ingredients:
- 1/2 cup Redstone mild extra-virgin olive oil
- 1 orange, zested
- 1/4 cup Redstone Sicilian Lemon balsamic
- 8 cups low-sodium chicken broth
- 1 pound orzo
- 2 orange
- 2 pink grapefruit
- 1 small red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/4 cup roasted fennel seeds
- 1 teaspoon coarse salt
- 1/2 teaspoon freshly ground black pepper
- optional: grilled chicken, shrimp, or fish
Instructions:
- Combine Olive Oil, orange zest, and balsamic vinegar in a small bowl, set aside.
- Cook Orzo: Add orzo to broth, cook until tender.
- Prepare Citrus: Cut between membranes to release segments.
- Combine orzo, citrus, onion, mint, basil, fennel, salt, pepper.
- Add olive oil mixture, toss all ingredients, serve chilled.
