Here is an à la minute dressing that John makes from time to time.
Many of you who purchase our Lemon Olive Oil also pick up Rose Balsamic Vinegar, so this may already be something you enjoy at home. If not, you’ll definitely want to try it.
This simple vinaigrette is both effortless and delicious. While it feels perfect for spring and summer, I’ve often found it to be a bright little pick-me-up on gloomy gray days as well.
So simple! Just emulsify the ingredients below into a vinaigrette. The quantities serve two.

Ingredients
- 4 tbsp Redstone Lemon Olive Oil
- 2 tbsp Redstone Rose Balsamic Vinegar
- 1 tsp Dijon Mustard
- Sea Salt & Freshly Ground Black Pepper to taste
Instructions
- Combine all ingredients in a small bowl, whisk to incorporate.
- Store remainer in fridge in airtight container.
Serving suggestions: use this as a dressing for sliced avocado, citrus salad, or grilled salmon. Enjoy!
